Starch is the major energy storage carbohydrate in plants, and it contributes a significant amount to the calorific content of key crop species such as wheat and rice.

It is also used in numerous industrial applications. It is stored as insoluble granules within the plant, which vary in size.

Rachel’s work is focused on the role that altered starch granule composition has on the digestibility and suitability of this starch for industrial processes.
